How To Make Keto Butter Chicken

This recipe is so easy. You will need: 1 (8 oz) package cream cheese 2 tbsp butter 1/4 tsp salt 1/4 tsp black pepper 1/4 tsp ground cumin 1/2 tsp garam masala Juice of 1 lemon 4 oz can of tomato paste 2 cups of chicken broth three tablespoons heavy cream

3-4 pieces of chicken breasts or 4-5 skinless, boneless chicken thighs, cubed into small pieces or cut in half if too large. (You could also use 4-5 skinless, boneless, skin-on chicken thighs.)

-Brown onion and garlic in a pot for about 4 minutes. -Add tomato paste, coconut cream, and ground ginger. -Add chicken broth, red wine vinegar, and cayenne pepper to the pot. -Simmer for 10 minutes, then add butter and heavy cream. -Stir in heavy cream until it’s a consistency you like.

-Add frozen spinach to the sauce and stir in until it’s warmed through. -Remove from heat and serve over boiled cauliflower rice or keto naan bread with one tablespoon of coconut oil, 1/2 tablespoon of paprika, 1/2 teaspoon of cayenne pepper, two teaspoons of smoked paprika, one teaspoon of turmeric, 1/2 teaspoon of salt, two large cloves of garlic, one medium onion 2 cups chicken broth two tablespoons of tomato paste 1/4 cup heavy cream three tablespoons pure unsalted butter 8 ounces chopped raw boneless skinless chicken breast 3/4 cup frozen spinach Directions: Brown onion and garlic in a pot for 4 minutes.

Preheat your oven to 400 degrees. Combine the chicken broth, tomato paste, and water in a pot. Bring to a boil on high heat, then reduce the heat to low. Add in the butter and shredded coconut. Let it simmer for about 10 minutes or until the fat has thickened slightly and the liquid has reduced by half.

Remove from heat and stir in both teaspoons of garam masala, salt, cayenne pepper, ground ginger, and garlic powder. Stir until heated through. Next, add both tablespoons of cream cheese into the sauce mixture. Add this in one tablespoon at a time so that you don’t end up with lumps of cream cheese in your sauce.

Turn off the oven, then place your chicken breasts onto a baking dish lined with parchment paper or aluminum foil coated with cooking spray. Top each breast with two tablespoons of spinach and cover them completely in the sauce mixture before laying the eighth slice of mozzarella over the top.

Place on the top rack of the oven as close to 400 degrees as possible for 25-35 minutes or until chicken is cooked through and juices run clear when pierced with a fork or knife. Remove from oven and serve warm!
